INGREDIENTS
2 lbs chicken breast
1/4 tsp salt
1/4 tsp white pepper
1/4 tsp onion powder
1 Tbsp light soy sauce
egg white from a large egg
3 Tbsp cornstarch
cooking oil for frying
garnish with roasted sesame seeds
*DREDGE
2/3 cup cornstarch
*SAUCE
1 1/2 Tbsp cooking oil
white of a scallion
1/2 cup to 3/4 cup honey
1 tsp soy sauce
2 tsp Shaoxing cooking wine
1 Tbsp rice vinegar
1/2 cup chicken broth
salt to taste
1 tsp sesame oil
*Cornstarch Slurry
1 1/2 Tbsp cold water
1 1/2 Tbsp cornstarch

Fast forward... I made this recipe yesterday evening for dinner and it was every bit as delicious as I expected, served with white rice and sauteed veggies. I will be making the sauce in larger quantity and storing in the refrigerator for similarly fried chicken wings, and (even) cut-to-size pork. It has a wonderful honey sweetened, sweet and (slightly) sour taste that will go so good with many of my oriental dishes.
