I’m so excited to partner with Bar-S Foods. They sent me this cool swag and I’m going to use their fully cooked chorizo to make an amazing pasta dish!

Ingredients:

3-4 Bar-S Fully Cooked Chorizo Sausages sliced in thin pieces
1/2-3/4 lb of penne pasta
One diced onion
3 minced garlic cloves
2 tbsp extra virgin olive oil
1/4 cup of red wine
24 ounce can of San Marzano tomatoes
3/4 cup heavy cream
1/4 cup Pecorino Romano cheese
Salt and fresh black pepper to taste

Dice up an onion, mince a few garlic cloves, and slice up 3 or 4 Bar-S chorizo sausages into thin pieces. Get a large pan pre-heated on medium and add about 2 tablespoons of olive oil. Saute the onion for about 3 minutes with a pinch of salt. Add in the sliced chorizo and cook until lightly browned. Stir in the garlic for about 1 minute then deglaze with a quarter cup of red wine; don’t forget to scrap the bits on the bottom. Pour in a 24 ounce can of San Marzano tomatoes and rinse with a quarter can of water. Break up the tomatoes and stir it all up. Add a little fresh black pepper and reduce for about 5 minutes. Stir in about three quarters of a cup of heavy cream and grate in some fresh Pecorino Romano cheese. Taste for flavor and add salt if needed. Salt some boiling water and drop in about half a pound of penne pasta. Just before al dente, add into the sauce with a touch of pasta water and finish cooking. Plate it up with a little grated pecorino and fresh black pepper. Guys, this was bomb! Big thanks to Bar-S Foods for sending this delicious chorizo!
