I used one of these in my science class, it’s actually so cool. If you hold your hand above the sand to make a shadow, it “rains” and simulated water will start pouring over the mountains.

Fun fact: Whenever you play with this map, you’re actually changing the topography of a real island in the Pacific. So every time you move stuff around you’re flooding at least one village and all its inhabitants!

explanation, I think: I'm pretty sure the sand is a very plain colour, so the people controlling the experiment can use a projector to place their image of the minecraft like terrain but idk.
