It’s called Bernoullis principle, basically when the water hits an object like a spoon for example there will be an area of low pressure beneath it and instead of the water just splashing away it instead flows with the curves of the spoon holding it in place.

I believe it has something to do with the air being trapped under it cohesion and temperature difference between the cold water in the bottle and the hot water honestly not exactly sure though possible it's simple and it's longer shutter and they turned up the water pressure somewhere else in the building and the initial spitting was air bubbles
