3 sticks cold unsalted butter (24 tablespoons), cut into tablespoon-sized chunks
1/4 cup dry white wine
1/4 cup white wine vinegar
1 tablespoon minced shallots
1/4 teaspoon kosher salt
1 pinch white pepper
1/2 teaspoon fresh lemon juice

I have this on total loop. Beurre blanc is life. I was front of the house staff under one of Julia's sous chefs ( has anyone seen Fritz Xavier? In and around Boston?) also (From a warm Villeroy Boch chowder cup is the finest use of this elixir of angels teets) and this with some hard french loaf was my meal for three years day and night. My arteries are woeful but my cup is full
