In NM, we add tomato sauce in place of half the broth, then cook it down. It's commonly called "Fideos" (FiDAYOHs) I make sure to add lots and lots of garlic. If I don't have fresh on hand then I use a good quality garlic powder! YUM.

Re: Pasta "el Dante:" Once upon a time at a not-terribly-good Seattle restaurant, a waiter loftily explained to me that the pasta would be cooked "El Dante, " improbably yoking the Spanish masculine definite article to the name of the famous 14th century Italian poet Dante Alighieri. Chef John, you are only the second human being I've ever heard say this but coming from you, it's completely OK since you are basically feeding my family at this point. Love your site.

Chef John! I've made this like 6 times since I've seen this video! It's so good! I used wheat pasta and put chopped sun dried tomatoes garlic and mushrooms in it! SOOOO good!!!

My mom-in-law does this with vermicelli/fideo and it's always good--usually when someone is sick and she wants a light meal.
