You and the Bearded Butchers are the only ones I've seen on YouTube telling people to remove this gland. I've done it for years but glad someone with good knife skills is teaching the process.

that gland right there is responsible for so many people thinking venison is all gamey and horrible... processors miss it, it gets in the ground, whole batch tastes like stank and nobody wants to try deer ever again... :(

This is a lymph node specifically. There are several of them in all mammals.

If it's close to or directly connected to a major blood vessel, it's almost always a lymph node. It's the body's sort of land fill/dump situation.

When people complain about the wild gamey taste of deer I tell them it’s all about how you process your deer. I have found that it’s the white fat that gives deer the gamey taste. No need to put deer meat in a salt brine because blood is in the veins not in the muscle. Muscles are like a sponge and will absorb water that you soak them in and cause your meat not to have a much favor. If you’re gonna ice your meat in a cooler put it in a bag first. If you want to have absolutely zero change of having a gamey favor my favorite method is to actually pressure can it, it basically taste like beef stew. This is just my opinion tho

It's not a gland but a lymphatic node, and if you think that one smells try the one in the shoulder...
(To be honest I'm knowledgeable in human anatomy, not deer anatomy, but am assuming that this is the same lymph node).
The reason it stinks is stagnant lymphatic fluids... Which promotes bacterial growth.

lol ….. very familiar with that gland, My dad was a meat cutter for 50 years, he assisted in butchering all of the deer that my family members harvested….he referred to this gland as the “Bugger”. Or “Booger “

You're the first person I've ever come across besides me that uses a fillet knife to butcher venison. Smart lady if I do say so myself 👍😉

Make a small insicion and hook the gland out with your finger there is a big gland on the shoulder aswell

My uncle went hunting a few times when i lived out in Texas, he only brought back a deer one time and he decided to make deer chili for dinner that night. Turns out he didnt clean it right and literally our entire family (besides me and my mom who werent there that day) got VIOLENTLY sick from it. We called the following day "Bambi's revenge" 😂😂

Honestly I’ve been working as a butcher since I was 12, and all of my cousins started earlier than that. No one told us why we should remove that or even that we should, but I can honestly say that that round gets trimmed up pretty good either way. Thanks for explaining why 😂

I have been coming in contact with this for years! It never even occurred to me this was a glad! It always gave me the "ick" but I just assumed it was some sort of cyst.

yess I remember doing this with pork when I was a butcher. Its crazy how many people didnt know about it!

I was taught to trim just like that to avoid the gland. Just remove all that tissue carefully. And you're usually good to go.
