Let me show you how l like to cook my kangaroo
fillet. Kangaroo meat is one of my favourite red meat because it's super lean, high in protein and iron, and super low in fat. Moreover, kangaroos are not generally not farmed, so it's organic by nature. 100g of kangaroo fillet contains about 22g of protein and only 1g of fat. However, kangaroo meat is a bit tricky to cook because it's super lean, a little like tuna steak. The trick is to keep it quite rare so it's still tender and buttery. I like to cook it on high heat with organic ghee (clarified butter) for about 2 minutes side until it's nicely browned
