I believe that tiles are slightly thinner than plates, that is why the tombstone and grindstone builds are “legal” as w don’t put stress on the pieces.
I believe Tiago actually explained it in one of his videos.

Fun fact: Connecting plates between studs vertically is illegal but it is legal to put a tile between studs.
