I'm not quite 60 and I am still bicycling (bikepacking) on an old 1988 KHS Special with Phil Wood Hubs, etc. etc. Anyway, my canoe rig looks just like yours -- a 14 foot green ABS plastic canoe with a sailing rig. I will soon be getting a second canoe, identical to mine, and making a catamaran out of the two -- with a central sail, proper centerboard trunk (hanging beneath the platform) and a proper boom tent. As for your canoe's bad sailing characteristics, I would say that your leeboards are too far back causing your boat to expend energy trying to turn alee instead of having a proper slight weather helm. It will sail better if you move it forward enough so that when you let go of the tiller the boat turns slightly to wind. Also, your sail is an old beach blanket. What do you expect. It was designed to be flat instead of having a 3-D Delta curf. Lastly, an outrigger creates more drag so the sail will have to be a bit larger.
