Making Tuna From Chickpeas

Chickpeas are a great alternative for tuna. This is my take on a chickpea tuna sandwich. It's a vegetarian / vegan twist on the viral Tunacado sandwich!

To make it vegan, ensure you use vegan mayo and parmesan 🌱

I love making a double batch of the chickpea tuna salad for meal prep and then assemble the sandwich on the day. You can even have it on a wrap, lettuce cups and even crackers for a snack.

i love chickpea 'tuna' sandwiches but usually i only add sliced cucumber and tomato, i've never thought to make it with pesto or avocado! i'm gonna try it this way tomorrow
