What I don't understand is why do I want to recreate that if it's done by my ear in auto?

People who listen carefully will understand where most of the problems of their mix come from. This video tells you if you listen carefully.

At what SPL does the ear start compressing?

This won't work as the human ear is beyond any compressor and has variable attack and release times and also the ear can brace itself for loud sounds so it has a lookahead basically. Our hearts have an electromagnetic field that can detect events before they happen to brace the body. Animals have it to. It has been proven by science. The oxford inflator or any sine wave shaper creates a much more natural compression to the ear. The release time is probably pretty accurate. Your best bet for a compressor is one that also has variable compression times. An optical or maybe an ai compressor.

The ear also naturally saturates sound but I could never find any speciffics about the saturation curve of the human ear, do you maybe have any info on that?

it has no sense, until you make this compression upward. Your welcome😅
