In regards to the jjambalaya, Houston is so close to the border of Louisiana there are lots of Cajuns & Creoles in the town. My Cajun family moved over in the 80's for work. So I always grew up with Cajun food, knew some of the little gems in town, but it became more mainstream in Houston in the last 10 years. It really boomed after Katrina when so many New Orleans natives moved to Houston and we got more Creole & Cajun places and influence in town.

I am a fresh corn masa guy all day long. But those flour tortillas made with the smoked brisket fat sounds amazing. And the eggs in those tacos were Gordon Ramsey perfect.

Y'all went to some great spots. If you're ever back in Houston towards the end of February, you should go to the BBQ Championship at the Houston Rodeo. It is a three day long event with hundreds of BBQ teams, live music, and lots of different parties.

I live directly across from the Pit Room. Virtually every moment of the day when I'm outside, I'm overwhelmed by the delicious smell of smoked meats. I'm also fairly sure they're raising property values lol

Brussel Sprouts are back not just because they changed how they cook them. But also because they have been massively improved by breeders. They are far less bitter and sulphury than they used to be. They literally taste nicer than when we were kids.
