Cooking Time:

Serves: 4

Ingredients
• Oil for frying
• Salmon fillet, 500g (seasoned with salt, pepper, paprika powder)
• Red bell pepper, ½ (chopped)
• Cherry tomatoes, about 15
• Pesto Rosso, 190g
• Vegetable bouillon cube, 1 (dissolved in 2 dl hot water)
• Cream, 3 dl
• Baby spinach, a handful
• Grated parmesan, 0.5 dl
• Salt and pepper to taste

Instructions:
1. Heat oil in a pan and sear the salmon fillets on high heat for about 1 minute on each side. Remove the salmon and set aside.
2. In the same pan, sauté the bell pepper and tomatoes for 1–2 minutes. Add the pesto, bouillon water, and cream. Bring to a boil, then stir in the spinach and parmesan.
3. Season with salt and pepper. Return the salmon to the sauce and let it cook through for another 2–3 minutes.
