Can it stay in the fridge for 2 days? ( I cooked it on Sunday evening but i'll eat it in the afternoon of Tuesday)

Nope! You better redo the video and check the recipe. I seriously doubt pot de crème has dots of chocolate as it is in this video.

why not let it boil? why only simmer? whats the effect of it boiling?
