If you'll notice, inside balloons there is a white powder that keeps the balloon walls from sticking to each other. You do not want that in your brew. If moisture gets into the balloon, that powder is going to dissolve and drip back into your container.

Air locks aren't that expensive, but they imply the bottle opening is a certain size.

If I wanted to go on the cheap, I would probably go with multiple layers of paper towels over the opening secured with rubber bands. If you do have blow out (the paper towel gets wet), you'll want to replace the paper towel.

Another possibility is a gallon sized food-safe plastic bag rubber banded to the top. Once it starts to inflate, the rubber bands can be loosened to let the carbon dioxide out.

Fermentation tends to be done in a couple of weeks, but you'll probably want to age it for 6 months to 2 years.

Yup! My second batch is close to done! Did 5 gallons, and split them into 5 different test batches that had different kinds of toasted oak! Need to rack it off the sediment again this week and then check tannins level and add some acid blend and maybe sweetener depending on how it tastes. Then bottle and age!

Never thought of using gallon plastic jugs, that's smart since they're so cheap and easy to source. I've seen some airlocks that have o-rings with them, so you can make a 3/4 inch diameter hole in the lid and slip the airlock straight in. They're only a few bucks, so it's worth it.
