Cooking Easy Cranberry Sauce from Dried Cranberries

I love cranberry relish! I hate having things in my kitchen that are one-recipe ingredients. A can of jelled cranberry sauce is one of those one-time-a-year things. Instead I just keep dried cranberries all year long. I substitute them for raisins, eat them direct as a snack, and once a year I turn them into cranberry relish.

What you need:
2 parts dried cranberries
3 parts liquid, preferably fruit juice

That's it! Oh, you want something fancy like my relish? Well, here you go:
2 cups dried cranberries
1 cup cherry juice (can be cranberry, apple, white grape or orange juice)
1 cup red wine (can substitute with more juice)
1 fruit cup (8oz) of pineapple in juice (crushed preferred)
1 orange zested and juiced
1 apple peeled and paired into small cubes
1 packet gelatin (Knox or a red or orange flavor. Use pectin if vegetarian.)
2 stalks celery finely chopped
1/2 cup nuts or seeds
Bring the cranberries and liquids to a boil. Add in gelatin or pectin and stir until dissolved. Add in any fruit, celery, nuts ect. and stir well. Remove from heat and chill before serving.
