I actually do prefer harder noodles, in hakata/fukuoka region it's common to specify the "doneness" lvl of ur noodle, and I always ask for "katamen"/(leaning)hard noodle XD. it's not undercooked per se, but just not kept cooking for as long as other doneness lvl. even with pasta I take it out at exact time, while my housemate actually likes it mushier. same for rice, I like the grains cooked but still separate with a chewiness while my dad like his rice softer/cooked longer.
