What is the version of Power BI you are using? I have a version from February 2023 but there is no option for the Parameter 'Fileds' unfortunately.

This is great. My question is how do you associate users to these roles? When I went to PBI Dataset and choose Security, I can associate users with these roles I created. However, it does not seem to take effect when I permission myself to one role or the other. I still see all columns.

I wouldn't call this column level security. This does not protect the original column for the user of the dataset or report. However, it can be a practical way to hide certain data in a visual from users for whom it is not relevant. Any other suggestions to 'really' secure colomns based on roles in PBIX without the use of third party tools?

This approach is not secure. This simply dynamically hides the columns from the visual based on security roles. There are numerous scenarios where user would still be able to see the data from the hidden columns. Anytime you grant the user build access to the dataset, they would be able to read values from these colums via Excel, or creating new report based on Semantic Model. Also if personalize visuals is enabled for the report, they would also be able to read the data. More technical users could also modify the underlying API call that the visual makes to obtain the data.
