📝 Ingredients:
• 1 loaf of bread, hollowed out
• 1 cup mozzarella cheese
• 1 tomato, chopped
• 1 red onion, chopped
• 1 bell pepper, chopped
• 2 eggs
• Salt and pepper, to taste
• 1/2 Tbsp chives, finely chopped (plus more for garnish)
• 100g bacon
• Additional mozzarella cheese, for topping
• Fresh chives, for garnish
• Pepper and chili flakes, to taste

🍽️ Instructions:
1. Prep the Bread:
Take a loaf of bread and hollow out the center to create a “boat” for the fillings.

2. Fill the Bread:
Layer the base with 1 cup of mozzarella cheese. Add the chopped tomato, red onion, and bell pepper on top of the cheese.

3. Prepare the Egg Mixture:
In a separate bowl, whisk together 2 eggs with a pinch of salt, pepper, and 1/2 Tbsp of chives.

4. Add the Egg Mixture:
Pour the egg mixture into the hollowed-out bread over the veggies.
Sprinkle more mozzarella cheese on top and add the bacon.

5. Add Seasoning:
Garnish with extra chives, a dash of pepper, and chili flakes if desired.

6. Bake:
Preheat the oven to 375°F (190°C) and bake the filled bread for about 20 minutes, or until the eggs are set and the cheese is golden and bubbly.

7. Serve:
Remove from the oven, slice, and serve warm with your favorite breakfast sides.
