King Charles III Cheesy Baked Eggs

King Charles shared one of his favorite breakfast egg dishes.

King Charles is a huge fan of eggs and cheese. No wonder this is one of his favorite dishes. It's delicious with warm crusty bread for breakfast, brunch or even dinner and simple to make too.

Cheesy Baked Eggs

A handful (4 oz) of fresh spinach wilted in a little olive oil
1 tomato (heirlooms are good) cut into bite size pieces
2 oz soft cheese (I use Cornish Brie, but any soft cheese will work)
1 egg
1/4 cup heavy cream
2 oz grated hard cheese (I like a mix of red Leicester and Montgomery cheddar, but any hard cheese will work)
2 fresh basil leaves (torn)
2 slices Prosciutto (torn) or chopped cooked bacon

Method
Butter a small ovenproof dish and line with wilted spinach, making a small well in the centre. Place the tomato) on top of the spinach.

Arrange the soft cheese around the dish amongst the tomatoes. Add the torn basil leaves and the optional Prosciutto. Season with salt and pepper.

Crack the egg into the centre of the spinach.

Pour the heavy cream over the egg - avoid breaking the yolk. Sprinkle with grated hard cheese.

Place in a hot oven (180C) for 8-10 minutes. Let it stand for a few minutes before eating.

I used to be a cheesemonger, so just as a little tip, if you can't find Montgomery Cheddar, you can use a Cheddar called Tickler by the Castello Cheese Company. It is a fantastic substitute and it too has the little salt crystals as the Montgomery Cheddar does.

I've been making that for years. I feel so royal now! lol! I just put the spinach in raw and it cooks ok. Because I don't have King Charles's budget, I use bacon instead of prosciutto, although I would much prefer it, and just ordinary extra sharp cheddar. I don't put tomatoes in but I might try it. It's a wonderful breakfast but it also makes a nice light supper, too, with a few pieces of garlic bread and maybe some fruit salad.

I love this with a little nutmeg in my sautéed spinach. The finished dish is wonderful with crusty white or sourdough bread and a fruit salad to cut the richness (and a chilled glass of Cremant d’Alsace!!!). Thank you, Chef!!!

The dairy products in the UK are divine. Whenever I’m in London, I love to go to the Harrods Food Halls, select a few different cheeses, and something like a salmon mousse or a duck pâté, some savory crackers, and have a little “picnic” in my hotel room. The cheese in the UK is the best.
