A taco variation you can try next time is either frying or baking (brushing with a bit of oil) the tortilla to get tostadas! The way we used to eat them growing up is with refried beans (there are a lot of simple recipes for this), salsa (I don't think you have tomatillos in Sweden, so perhaps stick to a tomato based salsa), meat (now as a vegan I would probably use soy crumbles flavored with vegan beef/chicken broth), lettuce, pickled onions, sour cream, and crumbled cheese (cotija, which I've seen a recipe on YT). You should give it a go, it's a great dinner or lunch alternative!

Never had a peach salsa and peaches are in abundance here in California so I'll try that!

Darn, I have Covid, and isolating in my bedroom watching cooking videos. Of course, I needed to revisit one of your lovely videos for comfort and beautiful inspiration. I am most definitely making mushroom tacos tonight, although sadly no peaches. I do have some hearts of palm though so maybe a salsa out of that? I miss your calm and grounding presence here on YT and hope you and Rob are enjoying a wonderful summer. I recently discovered maize crackers at the store - we typically have rice cakes. I really like it! I will try these toppings you have here. I haven’t had radishes yet this season 😅 it’s almost criminal
