Yo, two noodle soup options a day—tight, focused, and incredible. Coming from NYC, where decent pho is scarce, I’m always on an escapade for that realness when I touch down in cities with a robust Vietnamese community. For me, it’s all about the broth. If it’s not rich, clear, and simmered for hours, it’s not worth the stomach real estate, nah’mean?

Steven and Helen are generous, down-to-earth individuals. They insisted I try their Cau Lau, a dry noodle dish from Hoi An, which reminded me of Korean bibim-guksu, perfectly blending textures.

Their story, like their food, is built on resilience. After collaborating with the Americans during the Vietnam War, their family endured hardship, but their decades of perseverance led to the success of their restaurants in Portland, Oregon. The formula? An aligned, dedicated, and resilient family dynamic. Bong!

We are spoiled in Portland. Within 5 miles in any direction there are at least 10 more solid pho spots. Pho Hung just down the street is super solid. Even the burbs in every direction have a lot of solid choices.

Every time I come back to this page it makes me happy. Not a lot of things do these days, but this does. I just realised that now while seeing the posts again. I’ve had 5-6 of the soups they offer. Pork meatball soup is my favorite. But nothing about it is better than the consistent happiness from the staff. I can’t not smile in their restaurant.

Cau lau ?!!! That’s the most unknown and underrated Vietnamese noodle dish. That I’m my humble opinion surpasses pho and many many do not get to try.
