For tracking would it be extra beneficial to lay something on top if using two around a vocalist? And for mixing, do you think placing one behind the mixer would help in an untreated room or just one on each side?

Vocal booths are great for isolating individuals from the rest of the band to minimize bleed, not just for minimalizing room sound.
