I think Grievous was way under used in the prequels. He could have made a great main villain by himself.

Grievous has always been my favorite. I always thought his backstory was sad.

In Canon, Dooku would wreck Grievous six ways to Sunday.
In Legends, Dooku would still beat Grievous, but not as easily. He made sport out of him in Tartakovsky's Clone Wars, but in Labyrinth of Evil, it's stated that at times Dooku had trouble with Grievous but wouldn't admit it.

General Grievous thought that a warrior like him did not need any helpers. He believed that the Magnaguards were useless droids like the others. He was sure that he was something extraordinary and much more important. Accepting droids in his war robes, he finally accepted their presence.

Grievous hated the republic and Jedi already since the Huk (yam'rii) enslaved his species and the bugs got corrupt senators to paint the kahleesh as the aggressors and Jedi/republic let the huk go unpunished

In the original clone wars, there is a scene of Dooku and Grievous fighting each other. Although it is a training exercise, Dooku did defeat Grievous. I think Dooku would defeat Grievous.
