How to cook almost anything in an air fryer! From chicken nuggets to boiled eggs, you can cook many of your Food Optimising favourites in an air fryer – saving time, energy and money.
We’re still head over heels for our air fryers, which is no surprise considering how many advantages there are to cooking with them. Because you’re not using oil, they’re a healthier way to make all sorts of meals. They’re typically faster and more energy efficient than traditional ovens, too – a double whammy when it comes to saving energy and trimming those fuel bills. Better still, they give great results for a host of Food Optimising recipes.
Here's how to make a Slimming World friendly air fryer roast chicken Sunday lunch.
Serves 2
4 Syns per serving
300g baby new potatoes, halved
Low-calorie cooking spray
50g broccoli florets
30g Red Leicester cheese, grated
2 large skinless and boneless chicken breasts
2 level tsp gravy granules
Preheat your air fryer to 180°C.
Put the potatoes in the air fryer basket, spray with low-calorie cooking spray and cook for 10 minutes, shaking the basket halfway.
At the same time, blitz the broccoli in your food processor, add the cheese and some seasoning and blitz again until combined.
Put the chicken on a board and cut a large pocket into the long side of each breast. Squash the broccoli and cheese mixture into the pockets until it’s all used up, and season the chicken with freshly ground black pepper.
Remove the basket from the air fryer and shake the potatoes. Put the chicken breasts on top, spray with low-calorie cooking spray and cook for 18-20 minutes or until the chicken is cooked through, carefully turning the chicken after 10 minutes.
Make up the gravy. Put the chicken on 2 plates and serve with the potatoes, gravy and your favourite Speed vegetables.
