250g dried long grain rice
Low-calorie cooking spray
4 skinless and boneless chicken thighs, visible fat removed, finely sliced
1 red onion, finely sliced
4cm piece fresh root ginger, finely grated
2 garlic cloves, crushed
2 tbsp reduced-salt soy sauce
2 tbsp oyster sauce
250g chestnut mushrooms, sliced
2 large carrots, peeled and finely sliced
198g tinned sweetcorn in water, drained
10g fresh coriander, chopped
Pinch of dried crushed chilli flakes (optional)

Cook the rice according to pack instructions, then drain keep warm.
While the rice is cooking, mist a large wok or non-stick frying pan with cooking spray. Add the chicken and onion and stir-fry for 3-4 minutes, until lightly browned.
Add the mushrooms and carrots to the wok and cook for 5-6 minutes, until lightly coloured and softened. Combine the ginger, garlic, soy and oyster sauce pour in the sauce, simmer for 1 minute, then tip in the rice and sweetcorn. Toss until everything is coated, remove from the heat and divide between bowls. Serve with the coriander and chilli flakes, if using.
