It looks amazing!!. As a suggestion, in Italy we beat the egg whites and incorporate them with the yolks, sugar and mascarpone (yes instead of the whipped cream). That's how it's done traditionally, no pressure cause we all sneak some whipped cream in there sometimes to make it easier...

Unless you live in Japan where they have bizarre Salmonella-free chickens or you have in-shell pasteurized eggs (like the brand Safe Eggs), do NOT use raw eggs.

i know whipped cream is more stable and easier to manage but to make the cream fluffy, the way to go is whipped egg whites. even though i understand that this way would require more mascarpone and that is expensive outside of italy but you can make your own mascarpone starting from cream. if i intend to make small portions, i don’t even bother with the egg whites though. i beat the yolks until firm, add mascarpone a bit at a time and keep beating it. it eventually gets very firm and stable without adding anything. but it’s a bit heavy, hence portion size come into play. plus i don’t sweeten the coffee and i put way more cocoa powder. i make the cream very sweet instead so i create a bit of contrast. hope you keep experimenting

Amazing recipe. I just double broil the egg and sugar so it's not raw. In case mascaporne cheese is not available, i substitute it with cream cheese. It's not the authentic recipe, but it tastes great.
