I freaking love cooking on stainless steel. The water test works. Once the water beads and moves around and doesn’t sizzle, add your butter or oil. It only takes a couple seconds after that before it’s time to add the food.

I just attack the pan with beef tallow or ghee or avocado oil, works for me. I ain't gonna use Teflon cause I heard is toxic.

If my pan does that its so hot that every oil immediately smokes heavily and food burns .. so whats the secret? Bring it to that point and let it cool down a bit?

It’s funny how many people it doesn’t even cross their mind that Americans didnt start to see non-stick pans at all until the 1960’s.. and grandma didn’t burn her food or have many issues with things sticking to a pan.. just saying..

Although I still do enjoy my non stick pans especially for eggs😆 it allows you to be sloppy with your cooking and still be ok. 😂

If the water hits the pan like that it's too hot. Should not explode in all directions.

I just don't know.. I tried this and it kind of works, but if I want to make my pancakes for example it's just to hot... I get a nice crispy crust, but the inner part is not cooked and if I cook it longer... Well, it doesn't work for everything I guess... Or is there more to this trick? 🤔

You got rid of teflon. But look at the crazy amount of oil that you're using. Both are equally bad.
