CHICKEN & ROOT VEGGIES SHEET PAN DINNER 🥔🍗 Here’s the recipe 👇

4 servings // 490 calories, 44gm protein per serving

24oz chicken breast
4 large carrots
4 potatoes
2 red onions
1/4 cup avocado oil
1 heaping Tbsp dijon
2 lemons (juice)
Italian seasoning, red pepper, salt - a LOT!
Parsley

1. Preheat oven to 425 degrees F
2. Slice potatoes, carrots, onions, and chicken into medium chunks
3. In a small jar mix together oil, lemon juice, spices, and chopped parsley
4. Mix chicken, vegetables, and your seasoning mixture together in a large bowl, or right on your baking pan
5. Add to your baking pan in a single layer, bake for 40 minutes
6. Serve! Top with more dried seasonings if you like
7. No chicken? Use tofu.

Can I classify corn as a vegetable in my diet? So I want to eat veggies at every meal but I just don’t like that many of them, the internet says that corn isn’t technically a vegetable but its used as a vegetable. So nutrionally, is corn a vegetable?😂
