the only thing that bothers me a little is the lack of the word graph, what the presenter wrote is not a function, its the graph of some function, if he did that it would be perfectly acceptable NOT to include a formula, for the purposes of learning about the concept of functions without the distraction of the arithmetic.

How could you come to that conclusion? He didn't even define the function.

You are allowed to define a acceptable domain for the function. For example if you wanted only positive values you could put a note off to the side "the range includes only positive values".

Yes, the function, f(x)=x^2, without a defined range, would be assumed to have an infinite range, but you could define f(x)=x^2 ; with a range of [-5, 5] (without interval notation, if x is range, -5 <= x <= 5).
