Florida guy. Whoever told you it’s the texture of fish has never eaten or cooked gator. You probably got leg meat and that’s why it was that funky color, it’s just like dark meat chicken. The tail is where it’s at! Kinda like a pig pork tenderloin. Pound it thin and make cutlets, season and grill, you name it.

For anyone who hasn’t tried fried alligator I recommend it at least once . It honestly tastes like chicken but with kind of a seafood/fish after taste. I know you can’t get it just anywhere but if you’re ever in Louisiana a lot of restaurants have it on their menu.
