DEF is way up there on the list of the worst ideas ever put on a vehicle, mine was deleted on week 2 of ownership after it ran out of fluid and left me sitting on the side of the road because of a nonessential fluid that doesn't even help the environment like they want you to think. DEF delete is a thing but be careful not to let your DOT know.

That shits so annoying as a dealer mechanic I had to take the laptop out to the car (that was towed into the lot) to reset the DEF message which gave me 50 miles for some reason. Turned out to be a VERY clogged DEF injector I cleaned it, filled it, and reset it again and boom 380 miles left. I hate DEF

Can't just delete it but keep it all there? With a valve or something that you can turn on for inspection?

I wouldn't delete the DEF out of that truck. I would make it look like it has the f but I would delete it to where it does not work anymore.
