Here’s a great recipe for vegan “salmon” made from carrots – a perfect alternative to cured fish!

Ingredients:
1 large carrots
4 tbsp soy sauce (or tamari for a gluten-free option)
2-3 tbsp olive oil
1 tbsp smoked paprika
1 tsp apple cider vinegar or lemon juice
½ tsp sea salt
1-2 nori (ground seaweed for a sea-like flavor)
1 tsp liquid smoke (optional, for a smoky taste)

Instructions:

1. Peel the carrots and slice them into thin, long strips (like smoked salmon slices). A vegetable peeler works best for this.
2. Bring water to a boil, drop in the carrot strips for 5 minutes, then quickly transfer them to cold water. This makes them soft and pliable.
3. Mix all the ingredients: soy sauce, olive oil, vinegar, smoked paprika, salt, nori, and liquid smoke.
4. Place the carrot strips in a jar or container, pour the marinade over them, cover, and refrigerate for at least 5 hours (12 hours is even better).
5. Your vegan “salmon” is ready! Use it for sandwiches, sushi, salads, or appetizers.
