Fresh Iced Mint Latte

Mint Simple Syrup
1 dry cup sugar
1 liquid cup water
18-20 g fresh mint

Boil together water and sugar until sugar is dissolved then add mint off heat and let steep covered for at least 30 minutes. My syrup is a little darker because I use unbleached raw cane sugar, but if you use regular granulated sugar, it should be more clear.

Strain simple syrup into bottle and it’s ready to use!

Espresso
Ice
Milk
Optional mint to garnish

Pull shots of espresso into a small glass.

Add desired amount of simple syrup into separate drinking glass. *ALTERNATIVE* if you don’t have enough mint to make simple syrup or do not have time you can muddle a few sprigs of mint with sugar then pull your shots of espresso directly over to melt the sugar and to infuse the mint sugar into the espresso.

Pour your shots over the simple syrup. If your espresso is still hot, add your cold milk first to cool it down then add ice. If your espresso is cooled down, you can add ice before milk if desired.

Optionally garnish with a fresh sprig of mint and enjoy!
