Good basic recipe. I like the Kewpie mayo base. I would make a few changes, though. I'm suggesting these as a retired sushi chef who knows American customer preferences from coast to coast - and most like it much hotter than this. The first thing I would do is swap out the goma abura with goma rayu (regular sesame oil to spicy sesame oil) and add much more - maybe 3-4 times as much as was pictured. Same with the shichimi (nanami) togarashi. Quadruple the amount shown. If you like yours really hot add some ichimi togarashi to taste too. Next I would add several tablespoons of Sriracha, both for its red color and its garlicy taste. If you like Momoya Kimchi sauce then by all means use some, just don't neglect the Sriracha too. I saw some masago in the background, which I would add, just not too much, maybe three tablespoons in a batch this size, for color, taste and texture, along with a tablespoon or so of freshly ground iri goma (roasted sesame seeds) again for the aroma, texture and to thicken and bind the mixture. Allow to rest overnight for the flavor to mature and the sauce to hicken. It will be hotter by day two and reach peak spice by day 3 as the ground dried peppers continue to rehydrate. Of course this recipe should be adjusted to taste and guest preference, but the spicier the sauce, the less you have to use to get the desired effect, which makes your rolls firmer and less soupy. Dozo!

I added a dash of Thai sweet chili sauce to balance the salt taste and make it slightly sweet. Very good!
