I finally created my very own vegan pulled pork burgers, using mushrooms! The reason for that is not just because of my love for mushrooms in general, but also because canned green jackfruit is not available in Thailand. And fresh green jackfruits are just as hard to come across in Bangkok. So, I came up with a substitute, and I was very pleased with the result. I hope you will be, too. These burgers are perfect for your next vegan cookout/ BBQ! It is so flavourful and so easy to make. Not to mention, you don't need a lot of time nor a slow cooker for this recipe at all. You'd need less than 30 minutes and a few household ingredients and you're set! 👌

Vegan Pulled Mushroom Burgers 💚
• 450 g oyster mushrooms, shredded • 1 tsp cumin
• 2 tsp smoked paprika
• 1/2 tsp garlic powder
• 1 tsp onion powder
• 1 tbs avocado oil • 1 tsp Dijon mustard
• 1 tsp tamari
• 1 tbs liquid smoke
• 1/2 cup your favourite vegan barbecue sauce
• toasted wholewheat burger buns (2 servings)

Instructions:
1. Sauté shredded mushrooms in oil on medium heat for 7-10 minutes or until all the liquid has evaporated.
2. Add cumin, smoked paprika, garlic powder, and onion powder- continue to sauté until the spices are nicely toasted and fragrant.
3. Add Dijon mustard, tamari, and liquid smoke. Continue to cook until everything is nicely seared.
4. Stir in barbecue sauce of your choice and have a little taste, add a bit more mustard or salt, if needed.
5. Serve pulled mushrooms in burger buns (lined with romaine lettuce) and garnish with red cabbage for visual effects and extra texture.
