Pulled BBQ Recipe

1.5 lbs oyster mushrooms (or King/Trumpet Oyster)

BBQ Sauce

1 1/2 cups tomato puree
1/3 cup apple cider vinegar
1/3 cup date syrup
1/4 cup coconut aminos
1 tbsp smoked paprika
1 tbsp mustard powder
2 tsp onion powder
3-4 cloves garlic
1 tsp cumin
1 tsp salt
2 tsp black pepper

Instructions:

Prepare the BBQ Sauce by combining all the ingredients in a saucepan over medium heat. Bring to a simmer. Simmer for 10-15 minutes. Let cool.

Prepare the oyster mushrooms by cutting off the base of the oyster mushroom. Pull the petals from the oyster mushroom cluster. Tear each petal into strips lengthwise.

Preheat the oven to 425 F.

Add ⅔ of the BBQ sauce to the pulled mushrooms and mix. Spread the coated mushrooms onto a parchment-lined baking sheet. Bake for 15 minutes and mix the mushrooms. Cook for another 15 minutes. Add remaining BBQ sauce to the cooked mushrooms and mix.

Build your sandwich by adding some HV coleslaw to your bun, top it with the pulled BBQ mushrooms. Enjoy!

Dude, you must stay in the HVE cooking lab! You never disappoint. Your creativity is unmatched. No one has any reason not to eat healthy. You do all the heavy lifting. We just have to buy the ingredients, which sometimes is a challenge, and follow your directions. I love it and am grateful to you. My wife and I tackled these recipes this afternoon after worship service. We shared the work of making the bread, BBQ sauce & preparing portabello mushrooms as we had them on hand.
The bread was a success coming out with an awesome texture and it toasts very nicely. We made the vegan mayonnaise and used it to make our coleslaw. The BBQ sauce is spot-on with a rich and flavorful taste. Using it with the mushrooms rendered a truly enjoyable culinary treat that we had missed for the 2 1/2 years of eating whole food-plant based.

I made this meal for dinner yesterday, and OMG, it was so delicious. You all must save the recipe and make-your-own. The bread is so delicious and turned out perfectly. It is my new go to bread recipe. Loved the bbq pulled mushrooms and coleslaw too. Can't wait to make this meal for my mom, who is diabetic and loves pulled pork, and eating bread. I love mushrooms, especially oyster mushrooms. The problem is the slippery feel when eating them. I have to be careful and chew them slowly and properly because they will slide down your throat quickly causing you to choke. I've experienced it several times. Trumpets are the same.

I made this yesterday and just modified it a little:
Cook out/ bake out the water content in the mushrooms, before adding the BBQ sauce...

(Abby typing) Thank you. I just needed a quick BBQ sandwich for my husband's lunch and this fit the bill. I did add a bit more sweetener to make it for his taste but a ton less than the store bought stuff. I used king oyster mushrooms that I had on hand and saved the extra sauce for baked potatoes.

I have some oyster mushrooms that I foraged from our property. I think this is just the recipe to enjoy them in! Just wondering... why do you choose the coconut aminos rather than soy aminos?

My little electric smoker hasn't been used since i turned Vegan. I think I'll run this through the smoker for a few minutes for added flavor. I'll smoke the veggies first before adding the sauce. Thanks for this recipe and all others that you supply. I subscribed today!😊❤😊
