Happy Weekend everyone! Let’s make some Corn Fritters 🌽

Here we go - Corn Fritters 2 ways
.
(1) Tuna & Corn Fritters w/ Sweet & Chili Sauce
Ingredients (for 10-12 pcs)
- 150g Sweet Corn (1 small can);
- 150g Tuna (1 can, drain the liquid);
- 100g Potato (or 2 big potatoes, precooked and mashed);
- 1 Shallot (finely chopped);
- 2 Garlic Cloves (finely chopped);
- 1 tsp Salt;
- 1 tsp Black Pepper;
- 1/2 tsp Curry Powder;
- 1 Egg;
- 5 tbsp Corn Starch/Flour (more if needed);
- Handful of parsley or spring onion (finely chopped)

1) Mix the above in a big bowl very well until all combined (all ingredients should hold together, more corn starch/flour if needed);
2) Shape with your slightly wet hands one by one;
3) Chill for a couple of hours before cooking;
4) Pan fry or bake in the oven until both sides have become gold brown and crispy.

(2) Corn & Rice Fitters w/ Guacamole
Ingredients (roughly for 6-8 pcs)
- 50g Sweet Corn (from a tin);
- 2-3 Potatoes (baked or precooked, mashed);
- 1 Onion (small, finely chopped);
- 1 tsp Garlic (minced);
- 2 tbsp (cooked rice);
- 1 Egg;
- 1 tbsp Bread Crumb;
- 1 tsp Turmeric Powder;
- 1 tsp Cayenne Pepper
.
* Mix the above ingredients very well, shape them up, and fry them until golden brown on both sides.

~ GUACAMOLE ~
- 1 Avocado (mashed);
- 1 Tomato (finely chopped);
- 1-2 tbsp Lemon Juice;
- Pinch of Salt & Pepper
