I have 3 different vosteed chefs knives and for the price there hard to beat, they come sharp and cut well, I haven't reprofileed mine yet but what angle do you estimate you were at? And one more question were can I find the CMB stones they seem hard to find

Yeah I got a Kizer Juan chef knife when they were on sale for 10 bucks (normally 40). I was really impressed with how good it actually is. I use it for watermelons. I don't own any Vosteed's chef's knives. I'll have to check them out. I sharpen a ton of victorinoix steel at work and believe it, or not, their steel is amazing also.

Cool sharpening but i see the same problem as i have: closer to knife tip burrs still here((( probably that's nof a problem at all but we are sharpeners — slightly crazy guys!)

All of these knife channel videos sound like they're speaking another language and I have no idea what they're talking about but I will watch people sharpen knives and then cut assorted toiletries all day
