Similar to flank steak, skirt is amazing. Cut against the grain, finished with some salsa Verde or sort and crushed pistachios, it's delish 👌

In my state, Skirt is readily available at most grocery stores. I love using skirt when I make tacos

In Mexico we call this arrachera, normally used for “carne asada”. Difficult to get in Australia, but if you do normally you have to give it a good trim and butterfly it. But if you do that, it must be one of the best cuts you can get. Amazing piece of meat!

I love skirt steak. Love bavette steak !
I was ordering from a meat delivery, butcher box
But over the last year they have significantly reduced the meat types they offer. They’ve only had the basics lately, ny sirloin and rib eye
They used to offer so much!
IDK why!

My butcher nodded sadly when I asked for it. I am very old and my mum cooked it a lot! Long and slow in the oven in a dish called “beef olives”. Beef flattened out then stuffed and rolled up. Divine! Childhood fave. ❤
