I've done my fair share of research on the subject, and for me and my budget, I like the Panasonic GH5. Used ones are about $600, then throw on a speedbooster on it, and a Sigma 18-35mm 1.8 and you're set for most thing.

The r10 is a fantastic camera even for people who aren't just beginners. I love mine even though I am brand new to this, it's such a fun piece of gear to explore with and on a budget even with an rf 18 to 150mm lens

The r6 mk2 is the only answer. The R5’s like skipped higher frame-rates are very noticeable
