Heat breaks down starch, and it releases the sugar. A raw potato has zero effect on your blood sugar. But, when you start heating it, that’s when things start to go downhill. 

On the glycemic index, below 55 is low, and above 70 is high.

• Fried potatoes or french fries are at 75 on the glycemic index.
• Potato chips are at 54 on the glycemic index. 

Potato chips are better than french fries when you look at the glycemic index, but what about other factors. 

Potato chips:
• Oil Trans fat/GMO
• Sugar 
• Chemicals 

French fries are often consumed with ketchup or meat, which can cause the glycemic index to be higher than 75, which can cause additional problems. 

French fries are usually consumed with a meal. Potato chips are usually consumed as a snack, which adds a spike in insulin. 

Having a potato chip at the end of a meal instead of a snack would be a better choice, especially if it was cooked in olive oil or avocado oil.

Potato chips versus french fries, which one is better: Overall, potato chips are better to have than french fries. 

However, when starches like potato chips and french fries are cooked above 250 degrees Fahrenheit, it creates a chemical called acrylamide. Acrylamide may cause cancer.

I stopped eating potatoes and rice (all rice) and I no longer need to take naps during the day...the carbs were knocking me out.

Our ancestors didn't have a choice on food, they only had real food, but we have supermarkets full of added sugar processed food

I am so addicted to this man's videos..I can sit there and banged watch about 15 videos a day. And it teaches me so much. I am a medical assistant, I was never thought anything he said! I am happy I fell on his videos. Literally life changing.

If you refer to any GOOD cookbook, you'll find instructions for making French Fries. First the baking potatoes are cut (approx 3/8" to 1/2" thick). Soaking them in cold water for a while, then drying them off with a tea towel. Keeping covered (so they don't brown from the oxidation of the air) heat lard to 365 degrees F. Place some of them into this and cook for 4-5 minutes. Remove and let drain. Just before serving, you drop them back into hotter grease (about 385 degrees F) and cook for another 2-3 minutes. The results are amazing and well worth the time - tons better than potato chips for sure. Maybe not Keto but once a month, there's nothing like them!

I used to be addicted to potato chips but since I incorporated more butter and protein into my diet, I’ve stopped craving them. Never thought I could resist them.

This blew my mind because chips are so thin in actual potato material that I figured they would have much more harmful grease, whereas a french fry is a thicker piece of potato. I'm also surprised that the effect on blood sugar is different, I figured it would be the same.
