For manual focus, my S21 Ultra goes from 0.0 - 1.0 in pro mode, am I missing something or is 1.0 the same as the mountain/infinite symbol I see on some other S21 Ultras?

My S21 Ultra does have all the same settings as yours. It only has "ISO" "Speed" "EV" "focus" and "WB" why?

Is there any hack to use Pro Mode as default when smartphone is locked? Currently it's only possible in Auto Mode.

it's a fake pro mode. when I want to take an iso 650 photo manually it jumps to 800iso. on the other hand the automatic mode it does it all by itself. so we're stuck. for a connoisseur of photography I think you have to avoid samsung.
