That brown stuff is sand. Put salt on them before cooking and they will excrete the sand.

Razor clams are frequently eaten in Spain, especially in the region of Galicia! We tend to have them with a garlic and white wine sauce, they are really tasty. Also you clean them a bit before eating by putting them In water with salt, that way the expulse all possible dirt and sand they may have inside

There are a few steps before cooking them, and the first one is setting them upright in a water bucket, letting them eject all that waste, before you can cook them. Best recipe i know id pretty straightforward:
- On a hot plancha, put a thin layer of olive oil using a paper towel to make it as thin as possible so it doesn't attack you with boiling oil
- chop a garlic bud (the little part, not the entire clove) with some parsley until it is just small bits.
- Just as you put the razor clams on the plancha, sprinkle a fair amount of that garlic+parsley mix and pour a small amount of olive oil on top
- Flip when the shells start to have a gold/brown color
- Ready to serve when both sides are done
- Enjoy!

Hi! French girl here! so you're supposed to soak them in unsalted water for at least 30 mins (2 hours is best) so they reject their sand, and then start cooking them with fresh garlic and parsley (don't add any more salty condiments). Be careful when you toss them in the pan bc if you break the shells, some shards will remain in the meat and they are super tiny and super sharp so super lethal ahah So glad you got to try them though, it's great

In spain we enjoy these often, we let them sit over night in salt water solution to purge the insides ( the brown stuff and any sand ) and then you can cook them as you liked, most popular here is sauted in extra virgin olive oil and finish with black pepper, garlic and parsley ( you can add a splach of white wine for an extra kick)

Razor clams are DELICIOUS. My fav way - lightly sautéed in olive oil (the type used for cooking; not the one used for dressings), a bit of butter, some white pepper, and parsley. Soak the clams first in cold water for a couple of hours to allow them to release the sand and grit they are holding on to. I usually cook them in the shell and then I devein them. They taste good on their own, or roughly chopped and added to a light sauce, or added to salads. ... Almost forgot! They already are naturally salty, so be sure to taste them first before adding salt. They are a cold weather favorite in my house. 💥💯💥 And the shells make good garden compost. My lilacs love 'em.

here in italy they are so common that if you dig a hole in the sand you find 10 of them, we even make pasta with them
