Here's what I'm having for this weeks meal prep. If you didn't catch Dru's dish, click the link below.
Honey Garlic Chicken & Broccoli Stir Fry
Ingredients
3 chicken breast, cubed
1/2 cups of soy sauce
2 tsp sesame oil
3 tbsp honey
2 tsp minced garlic
1 tsp minced ginger
1/4 cup and 2 tbsp chicken broth
1 tsp salt
1 tsp pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp red pepper flakes (optional)
2 cups of broccoli
1 large onion
2 cups of carrots
2 tbsp corn starch
2 tbsp olive oil
green onions and sesame seeds (optional)
Instructions
1. Add cleaned chicken to a medium bowl and season with salt, pepper, onion and garlic powder. Mix until fully coated.
2. Heat large skillet on medium high heat and add olive oil.
3. Place chicken to heated pan in single layer. Cook on each side for 4 minutes. You may have to do this in batches if you have a lot of chicken.
4. Remove cooked chicken from pan and set aside.
5. In the same large skillet, sauté` the onions. You may have to add a little more olive oil.
6. In the same skillet, add broccoli and carrots. Cover and allow to steam for at least 5 minutes or until they've reached your desired tenderness.
7. In a medium bowl, wisk together soy sauce, honey, garlic, ginger, 1/4 cup of chicken broth and red pepper flakes. Set aside.
8. In a separate bowl, wisk together corn starch and remaining chicken broth to make slurry.
9. In the same skillet, add cooked chicken to veggies.
10. Add sauce mixture and corn starch slurry to veggies and chicken. Cover and allow to cook for an additional 1-2 minutes.
11. Top with green onions and sesame seeds.
12. Serve over white or brown rice or noodles.
