Healthy Strawberry Oatmeal Bars

This healthier oatmeal bars recipe is a favourite, because these delicious treats are easy to make and made with fresh strawberries, whole grain butter crumb topping.

Prep time 10 minutes
Cook time 40 minutes

Ingredients:
1 cup old-fashioned rolled oats
3/4 cup whole wheat flour
1/3 cup brown sugar
1/4 tsp ground ginger
1/4 tsp salt
6 tbsp unsalted butter, melted
2 cups strawberries, diced
1 tsp cornstarch
1 tsp freshly squeezed lemon juice from 1/2 lemon
1 tbsp granulated sugar

Instructions:
Preheat the oven to 375 degrees F. Line an 8x8-inch baking pan with parchment paper.
In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside ½ cup of the crumble mixture, then press the rest into the bottom of the prepared pan.
In a small bowl add diced strawberries, corn starch, sugar and lemon juice. Stir well.
Scatter the strawberries over the crust. Sprinkle the reserved crumbs evenly over the top.
Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely . Then slice, and serve.

Well, I challenge the notion that these bars are healthy when they have both white and brown sugar in them. However, I’m not really interested in healthy food anyway, so it’s all good from my perspective.

The recipe seems quite simple and easy and I’m sure you could substitute other leftover fruit you have on hand for strawberries. I’ll probably try this. Thanks!
