Japanese Soufflé Pancakes with 52g Protein!

It’s cold outside, meaning slow mornings snuggling up eating breakfast in bed… and what better way to do that than with these protein Japanese soufflé pancakes made with @pescience protein pancake mix ? 🥞 I was sooo happy with the way they turned out, and of course I devoured them right away 🤤 you can’t go wrong with 52g of protein!

Nutrition (entire recipe without toppings):
513 cals, 52P, 47.5C, 20F

Ingredients:
-3 eggs
-60ml unsweetened almond milk
-90g @pescience protein pancake mix (discount code FIT15)
-30g @lakanto Monkfruit sweetener (discount code FIT15)

Directions:
-Preheat the oven to 325F
-Separate the yolks from the whites (or just use the yolks and then use cartoned egg whites for the next step)
-Add the yolks, almond milk, pancake mix, and sweetener to a bowl and mix
-Beat the egg whites in a separate bowl until stiff peaks form (this is easiest with an electric mixer as shown)
-Fold the egg whites into the mixture gently
-Spray two round 6 inch cake pans with cooking spray, then pour the batter evenly into both
-Bake for 20 mins, then take them out and add to a plate + add toppings
-Enjoy! 🥞

You kinda messed them up tho, they look sad. I think part of it is the way you mixed in the whites cause you just stirred them. Try folding it when stirring/mixing it deflates the batter and fold just until combined. Or try adding SOME sugar because sugar gives structure
