If the Colorado was able to slice though 1 mile of rock to create the Grand Canyon, why haven't the Mississippi, or the Hudson, or countless other powerful rivers carved canyons as deep as this?

Also, how were the dead end canyons created? The river couldn't flow through them and the water was far too stagnant to carve very much.

lets tl;dr this... it was either:
1: someone ran around, piling up layers of rock to match up with other rock layers all around the world, leavin room for the river there, or
2: god did it, or
3: water erosion.
