SPINACH BASIL PASTA
Protein per serve: 41g
Fibre per serve: 14g
INGREDIENTS (serves 2)
100g (3.5 oz) fresh baby spinach
Small handful fresh basil
200g (7 oz) firm tofu, drained
4 Tbsp nutritional yeast
15g (0.5 oz) sunflower seeds
Pinch of salt
Drizzle of extra virgin olive oil
200-220 g (7-8 oz) lentil rigatoni
Toppings
Hemp seeds
Chilli flakes
METHOD
Start by cooking the pasta in abundant salted water.
To a blender, add spinach, basil, tofu, nutritional yeast, sunflower seeds, salt, and oil to taste, along with ½ ladle of pasta cooking water. Blend until smooth.
Drain the pasta and combine with the sauce. Feel free to add more pasta water to adjust the creaminess of the sauce to your liking. Serve topped with hemp seeds, chilli flakes and a drizzle of olive oil

If you replace the tofu with cheese, you wont get nutrient deficiency like the girl in the video.

I know this is plant based recipe but tofu seriously makes my stomach hurt . I was wondering can I substitute shredded chicken ? Or do you have another suggestion. Thank you
